C Is For Cocktail

This evening’s cocktail will be drunk quietly and reflectively in honour of a high school classmate and neighbourhood friend who died far too young earlier this week of cancer. She leaves behind a husband, 3 children and her parents and brother.  Leigh Anne, I raise my glass upward to you.  Rest in peace.

Minty Dog
recipe via Two Tarts

1 ½ oz grapefruit juice
1 ½ oz gin or vodka (your choice)
Mint sugar (recipe below)

Moisten the rim of your glass with grapefruit juice.

Put mint sugar in a shallow dish and turn the glass over into the dish to coat the rim with sugar.

Pour grapefruit juice and gin or vodka over ice.

Mint Sugar

¼ cup packed fresh mint leaves
½ cup sugar

Combine ingredients in a food processor until mint is finely chopped and evenly distributed.  It’s recommended to make only as much as you need as this sugar doesn’t keep very well due to the large amount of fresh mint.
